The 2020 Joy is a ‘Méthode Champenoise’ style, prestige cuvée, of the globally acclaimed Nest Egg Series. The finest parcels of Pinot Noir (65%) and Chardonnay (35%) were sourced from the Piccadilly Valley in the Adelaide Hills, with vineyards situated at altitudes of 450-600m. The delicate fruit was hand-picked, whole bunch pressed, and free run juice transferred to a mix of French oak barrels and stainless steel. The juice in barrel underwent wild fermentation and specially selected yeast strains were chosen for fermentation in tanks. All parcels were kept on light lees for 6 months separately to add complexity prior to blending. Following secondary fermentation, the wine has been aged for 48 months on its yeast lees in the same bottle before disgorging.
Captivating aromas of red apple and citrus blossom, enriched by the nutty undertones of hazelnut. Layers of spiced honey mead and freshly baked brioche contribute depth and complexity. The palate exudes red berry spice, lemon curd, and the rich warmth of toasted almonds.
