The 2021 Bird in Hand Riesling is an exciting release for us as it marks our foray into one of Australia’s most coveted cool climate regions for premium wines – Tasmania. Our 2021 Riesling is a blend of three carefully chosen parcels from Tasmania’s rugged East Coast and South Australia’s world renown Clare Valley.
The parcels from the Freycinet Peninsula, Watervale and Stanley Flat were handpicked and kept separated from picking to blending at the winery.
The handpicked fruit was whole bunch pressed in order to ensure gentle extraction of the juice from the berries before undergoing a long, cool fermentation of 13 days. The wine was then left on light lees for six weeks prior to bottling young and fresh.
The combination of these parcels has created a wine of freshness, elegance and vitality. Lifted fragrance of kaffir lime, fresh herbs, jasmine and green apple.
Ageing potential: A wine with all the hallmarks to age gracefully over the next 10+ years.
Food pairing: Pairing well with delicate fish and light Asian dishes, the Riesling is a good match to spaghetti marinara or Vietnamese chicken salad.
